Fall to me is the time of year God really shows off His majesty! Oh, how my family loved fall when we were still all under one roof. Now that they are grown and on their own, fall ushers in its abundance of colors, scent, and events that all hold the sweetest memories for me.
Fall arouses all five senses with colorful, crunchy fall leaves underfoot, cool, crisp air, to tingle your lungs, hayrides, fall festival, and amazing food!
The excitement of Friday night football with sights, sounds, and delightful experiences that still linger as wonderful memories of concession foods, marching bands, and fans are cheering on their team.
Fall was the perfect time for baking if I baked, but baking would never show up on my resume! Thank goodness, my daughter liked to bake…cookies, cakes, brownies, and her specialty…pumpkin muffins. Pumpkin muffins filled the house with the wonderful, delightful smells of fall. With mouth-watering anticipation, we awaited her warm, delicious pumpkin muffins to make their debut from the oven. They were well worth the wait!
I was recently visiting my now-grown daughter, son-in-law, and three grandchildren in Mali, Africa, where they live. I carried the ingredients to the recipe along in my suitcase. Even though there is no ìfallî in Mali, Bethany still made the delicious muffins that were shared with friends and neighbors.
Now back in Arkansas, the weather has cooled, and I see little signs that fall is near! I am gathering with my friends and guess what delicious, delightful dish I am baking? You would be 100% correct if you guessed PUMPKIN MUFFINS! The recipe she uses is so easy even a non-baker like me cannot mess them up!
This simple recipe is perfect for any fall gathering!
Easy & Delicious Pumpkin Muffins

Ingredients:
1 – Spice Cake Mix (dry)
1 – 16 oz. can of pumpkin puree (not pumpkin pie mix)
Stir together dry cake mix and can of pumpkin puree. Pour into a muffin tin lined with paper muffin cups.
Bake at 350 degrees for 18-20 minutes until a toothpick comes out clean.
A light mist of Baking Spray will keep the muffins from sticking to the muffin cups.
Makes 12 moist and tasty muffins! Enjoy!
